The oatmeal cookies are low in fat-free oil, and can actually be done easily and virtually fat-free by the omission of the coconut.

When we got to our room in Kotor, Montenegro – which proved to be a shared apartment with another couple – it was raw cane sugar in the cupboard waiting for me. I took this as a sign that I had to make cookies.

With a water heater, oatmeal and whole wheat flour, it worked in my favor. I also used raisins, cinnamon and coconut, but you can add any combination of goodies you want. I used a technique I use for muffins and cookies that do not use any oil, because I still do not want everyone to carry with me on our travels. It is actually a good excuse for the full value of the methods that I much prefer to stay.

2 cups oatmeal
1 cup hot water
C. 1 teaspoon of cinnamon / nutmeg / pepper mix
1 cup flour
¼ cup raisins
¼ cup unsweetened coconut grated
¼ cup raw sugar
Pinch of salt

Low Fat Oatmeal Cookies Itinerary

First mix Preheat oven to 350 degrees F. Add 1 cup of oatmeal with water in large bowl. Add cinnamon, mix well and leave for a few minutes for oats to absorb the water.

2nd Then pour the remaining ingredients. Stir gently and add more water or oats as necessary to achieve a consistency of cookie dough.

Spoon a third on baking sheet lined with parchment paper and in the oven for 15-20 minutes until they begin to brown around the outside.
